Today's "use everything in the kitchen that I possibly can so I don't have to move it" recipe:

Cornmeal-crusted honey-cayenne catfish

1 catfish fillet
1 t. cayenne pepper
2 t. olive oil
1 T. honey
1 T. butter
2 T. coarse cornmeal
salt and pepper

Pretty effin' simple, actually. Mix the cayenne, honey, and olive oil. The honey will mix better if it's warmed a little. Add more cayenne if you like it xtra xesty, and add whatever other spices turn your crank. Coat the fish liberally with the spice paste and set it aside for at least 10 minutes.

Melt the butter in a fry pan over medium heat. You can get away with using even less if it's a non-stick pan. Salt and pepper the fillet, and coat it with cornmeal. Two things here: you don't want to use too much cornmeal, and you don't want a searing-hot pan. A slight dusting and a mild saute will ensure that you don't end up with hard, uncooked cornmeal bits. Give it about three minutes on each side.

I served mine with farfalle and creamy pesto (1 T. butter, 1 T. cream, 3 T. pesto).

Yum.
